Three months ago when my life changed rapidly I took some radical steps to change with it. One of them was to readopt a vegetarian diet. Not for any other reason other than to have the health benefits of eating less meat and less processed food. Cooking for one requires so much less food and with a vegetarian diet - even less. So, it has been easy and I don't miss anything - thank goodness.
One interesting piece has been that two separate friends noticed that I had what looked like healing bruises under my eyes with a yellowish tint. Not the most attractive thing. I thought, perhaps, it was just stress or the results of crying. After some research though it is iron deficiency.
Did you know that women the ages of 14-49 are supposed to get 14.8 mg of iron a day - that is a lot of iron. AND without a meat consumption I wasn't eating enough foods high in iron. So, off to the health food store to get a better multivitamin and an iron supplement (you have to have vitamin B to process the iron).
A good friend said though that she thought the bruising was a manifestation of the healing that I am doing within just shown on the outside. - Very nice thought, but I am still going to take my iron!
Oh, and I think I officially lost 20 pounds - nice supplement to going vegetarian.
